I got this recipe at a Curves weight loss meeting a few years ago. Mary W
Remove the leaves and most of the stem from a whole head of cauliflower. Cut into florets, and chop the stems into quarter-inch pieces.
Boil or steam until soft. It takes me about 12 minutes in the microwave. Drain and dump into blender.
Add an eight-ounce block of cream cheese or Neufchatel.
Season with 2 tablespoons “chopped garlic in a jar,” draining off most of the oil, and a dash or two of both salt and pepper.
With the blender lid on, blend and stir, alternately, then puree until it’s as smooth as you like.
