Texas Caviar

  • 2 (15 oz) cans black eyed peas
  • 1 (15 oz) can white corn
  • 1 (15 oz) can yellow corn
  • 1 (15 oz) can black beans

Rinse all beans and drain thoroughly and blot with a paper towel

  • 2 (2 1/2 oz) cans chopped black olives drained
  • 2 (4 oz) cans green chilies chopped
  • 2 cans Ro-Tel diced tomatoes and chilies drained
  • 1 bunch green onion, finely chopped
  • 1/2 tablespoon minced garlic
  • 1/2 tall jar jalapeno peppers (hot)
  • 1/2 cup chopped fresh parsley
  • Optional: 1 bell pepper chopped coarsely

Mix all the above together then add:

1 bottle Kraft Italian salad dressing (use aprox 8-10 oz)

Allow to marinade overnight and serve with tortilla chips. This is served cold.

Adjust the amount of green chilies and jalapeno peppers as desired
